The Pumpkin Cake

To bake a Pumpkin Cake, you'll need:

450 g sugar

4 eggs 

375 ml oil

350g flour + a pinch of salt

½ pack baking powder

2 tablespoons cinnamon

400g diced cooked pumpkin

100g chopped walnuts

 

Mix sugar and eggs 

Add the oil

Add the rest and mix

 

Bake 180°C for 45mn to 1 hour

 

For the Icing, mix together:

200 g soft cheese like Philadelphia or Mascarpone cream

85g butter, softened

100g ice sugar

the zest of an orange

the juice of half an orange


When the cake is cool, cut it in two and put some icing in the middle of the cake. 

Finish spreading the icing on top of the cake and on the sides of it.
