Carrot cake

To bake a Carrot Cake, you'll need:

200 g of white sugar

60 g of brown sugar

4 eggs 

300 ml oil

300g flour

a pinch of salt

1½ packs of baking powder

2 tablespoons cinnamon

330 g of grated carrots

100g chopped walnuts

 

 

For the Icing:

250 g soft cheese like Philadelphia or Mascarpone cream

200 g ice sugar

1 tbsp of Vanilla extract

Some nuts

 

Beat the eggs, sugars and  vanilla.

Add the oil.

Mix in the flour, baking powder, salt and cinnamon.

Stir in the grated carrots and the chopped nuts.

 

Put the dough in a 9x13 inch tin with a removable bottom.

Bake at 180°C for 40 to 50mn.

 

Prepare the icing:

Mix together the soft cheese and ice sugar.

Add the vanilla extract.

 

When the cake is cooked, let it cool for 10 mn oustide the oven before taking it out of the tin.

When it's cold, frost it.

You can cut the cake horizontally in 2 and frost the middle before covering it with the rest of the icing.

 

What about decorating your cake with some nuts on top of the icing?
